DUCHESSE POTATOES

These are just fancy mashed potatoes. They can be piped into shape ahead of time and finished in the oven as you are serving.

DUCHESSE POTATOES

2 1/2 lbs peeled potatoes

3 whole eggs

3 egg yolks

2 oz butter

2 oz heavy cream

1/2 tsp salt

1/2 tsp white pepper

nutmeg

Directions

  1. Boiled potatoes in lightly salted water. When cooked remove from heat and drain
  2. Pass potatoes through a ricer (mash)
  3. Stir in cream, eggs, egg yolk and spices
  4. Spoon into piping bag and form into shape ( pipe on baking sheet or directly onto serving dish)
  5. Bake at 375 degrees for 15 to 20 minutes
