White Chocolate Cheesecake
My base cheesecake recipe is very simple. Cream cheese, egg yolks and sugar. Everything additional is there for flavor. The secret is to beat the cream cheese until it is very smooth and and very well combined. A low heat will set the cake almost like setting a custard. The result should be very creamy and melt in your mouth.
WHITE CHOCOLATE CHEESECAKE
4 250ml CREAMCHEESE
8 EGG YOLKS
12 oz SUGAR
6 oz WHITE CHOCALATE
4 oz 35% CREAM
1 tsp vanilla
CRUST
1.5 cups GRAHAM CRUMBS
1/2 cup SUGAR
1/2 cup MELTED BUTTER
- Mix crumbs, sugar and butter together and line the bottom of a 10 inch springform pan. Bake for 10 minutes at 350 .
- Heat the cream, chop the white chocolate and add to the heated cream. Stir until combined and smooth
- Beat cream cheese until fluffy Add sugar and vanilla and beat in. Then add egg yolks, continue beating until mixed. Fold in white chocolate.
- Pour into pan and bake at 250 degrees for approximately 1 hour or until set.
Garnish with fruit or berries
