BBQ Ribs
This is more method than recipe.
I will rub my ribs then smoke them before chilling if I have access to a smoker. When roasting the ribs it is important to keep them sealed, this lets the steam in the pan do it’s work. I will save the liquid in the pan to add to my BBQ sauce, or make baked beans and add the pan liquid to the beans to make BBQ Baked Beans

BBQ Rub
Sauce
Sprinkle the ribs with the rub. Massage the spice into the meat.
Cover and place in the refrigerator. Chill overnight.
Take out and brush with sauce.
Place the ribs in a deep pan with a cake rack or some sort of grate on the bottom.
Pour 1 cup of water in the bottom of the pan. Do not let the water touch the ribs.
Seal the pan. If you do not have a tight fitting lid, seal with plastic wrap, cover with foil. Pinch the edges to seal the pan so moisture does not escape.
Place in the oven at 350 F for 2 hours exactly. Shorter time will give you tough ribs, longer, the meat will fall off the bone. You want the meat on the bone, but able to pull away cleanly.
After 2 hour remove from the oven and break the seal. Let the ribs cool and set.
Brush with lightly with sauce and finish on the BBQ. Or 15 minutes in the oven.
