Date Squares
I saw the second cook have a package of pitted dates on the counter today, so, this recipe is for Gord. This is another of my mother’s recipes. I am looking at her writing and am making some guesses (anyone that ever got a recipe from her has learned to guess at her intention). I think this is for a 9x 13 inch pan. I will check with my sister for the pan size and the size of the package of dates.
Date Squares
Dry ingredients
2 1/2 cups rolled oats
1 cup flour
1 cup butter
1 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1/2 cup brown sugar
Filling
1 pkg pitted dates
1/2 cup sugar
water
1 tsp lemon flavor
1 tsp vanilla
Mix the dry ingredients until it forms a crumb
Place the dates and sugar in a pot and cover with water.
Simmer until thick.
Mix in the vanilla and lemon. Let cool a bit.
Divide the crumb in 2 portions.
Press 1 part of the crumb in the pan to form a bottom
Spread the filling evenly over the bottom
Take the rest of the crumb and spread over the top.
Bake at 350 F until light brown
