Pork Tocino
This is another of the Filipino dishes that I do. I learned this from Noli Seurto. Noli was one of my cooks on the Helix Intrepid.
Tocino is a sweet garlic pork that is very addictive. I refer to this as meat candy. It is simple to make with just a few ingredients. It is definitely better with fattier, moist cut like pork butt. Cuts like loin or sirloin will be too dry.
This one of the things I will get requests to make most often It is also one of most requested recipes that I hand out.
Pork Tocino
2 pounds pork butt, sliced to 1/4-inch thick
1 cup brown sugar
1 cup pineapple juice
2 tbsp soya sauce
2 tbsp crushed garlic
4 drops red food coloring
Mix the all the ingredients together.
Pour over the pork. Rub into the meat
Place in the refrigerator for a mininum 2 days. 3, 4, 5 days is better
Sear in a frying pan. If doing large amount fry until starting to develop a black color and place on a pan. When all the pork is fried Baked in the oven at 350 F for 10 minutes.
