CHILLED MANGO SOUP

As it was a bit warm here yesterday, I thought a chilled soup might be a thought. These make a light cool starter if you are having a warm weather dinner. It is a bit of an old style recipe, people now, would rather just dump it in a glass and call it a smoothie. I look at it the other way, they are drinking their soup from a glass.

CHILLED MANGO SOUP

5 Mango

3 orange

1 lemon

6 oz corn syrup

4 oz white wine

4 oz yogurt

2 oz cinnamon liquor

1 tblsp sugar

Directions

  1. Remove zest, then peel and seed oranges and lemon. place in a food processor, puree quickly.
  2. Peel the mangoes and add to food processor and puree
  3. Mix in corn syrup, wine and cinnamon liquor until dissolved
  4. Stir in yogurt and chill.
  5. Place zest in a hot pan and add sugar, stir until sugar is melted. Remove from heat
  6. Remove from refridgerator and stir to mix flavors
  7. Garnish with a dollop of yogurt and the candied zest
