Salmon en papillote
Salmon en papillote, or Salmon in parchment is an easy way of doing salmon. Haddock, cod or halibut also work very well. When the parchment packets are sealed, you are essentially steaming the fish, and infusing it with whatever seasonings you have placed in the packet with the fish.
The packets can be done ahead of time to make life easier. If you do them ahead, do not add too much liquid as the parchment will get soggy.
SALMON in PARCHMENT
Sliced lemon
thinly sliced onion
dill or basil
julienne carrot
julienne celery
salmon portions, 4 to 6 ounce
white wine
Salt and pepper
parchment paper in pieces large enough to fold over to make a packet
Directions
Place lemon, onion and dill or basil on parchment. Place salmon on lemon. Cover with carrot and celery. Then drizzle lightly with wine. Season with salt and pepper
Seal parchment by crimping the edges .Preheat oven to 375
Place the salmon packets on a baking sheet. When ready bake for 15 to 20 minutes
Remove from parchment and serve salmon and carrots.
