Bacon and Mushroom Beef Rouladen
This is my version of Beef rouladen. Beef rouladen is a German dish that usually has pickle rolled in the center. It is my understanding that if bacon is added, it is on the inside, not wrapping the beef.
BEEF ROULADEN
Beef cut into 3 in. x 5 in. pieces
Bacon slices
Portobello mushrooms
Red wine
Diced Onion
Salt
Pepper
Beef stock
- Season beef with salt, pepper and red wine. Place beef between plastic wrap and beat until 1/4 inch thick
- Clean mushrooms and cut in strips. Place on beef and roll up
- Wrap with a slice of bacon. Use a toothpick to hold in place.
- Brown in a frying pan ,when the rouladen are browned toss the diced onions in the pan and sauté
- When the onions are cooked through deglaze the pan with an ounce of red wine, then add 12 oz beef stock
- Place the rouladen and the stock from the pan in a casserole dish
- Bake for 1 hour. Drain liquid and thicken to make a sauce.
