Granola
I have not been cooking much lately. I have been trying to cut back and eat more fiber and less carbs. For a snack I made this. It is not sugar free or carb free, but it is better than the alternative.
I split the recipe in 2 lots and added chocolate chips to half.
Granola
3 cups oatmeal
3/4 cup sliced almonds
3/4 cup pecan halves
1 cup dried cranberries (craisins)
1 cup loose packed brown sugar
1/2 cup flour
2 oz melted butter
2 oz honey
8 oz apple sauce
Directions
Mix the oatmeal, nuts, cranberries, brown sugar, and flour.
Warm the melted butter and honey together and mix. Then pour over the oatmeal mixture.Stir until evenly dispersed
Add the apple sauce and mix well. I like to use my handsto make sure there is no dry ingredients.
Line a pan with parchment and coat with cooking spray.
Press the mixture in a pan. Take a knife and mark lines in the granola. Don’t cut all the through. It won’t hold together.
Bake at 300 for 15 minutes. Take out and let cool for a few minutes, then bake for another 10 minutes at 350
When cool break into pieces and store in a sealed container
