The Meal
If anyone is wondering how much 120 people (mostly young and athletic) can eat, it is a lot. I thought we had enough food for 150 to 175 people. I was wrong I had just enough for 120. There were a few things we ran out of, but we mostly scraped by with the bare minimum left.
I would like to thank Elise Jordan-Robichaud for doing the salads, Stacy for keeping the serving line full and all the others for doing the extraneous jobs that allowed me to concentrate on the main courses.
I would also like to thank Rob and Simone for the opportunity to do what I do.
The Salads
Potato Salad, 10 kg potatoes (ran out)
Broccoli Cheddar Salad (ran out)

The Main Course (the meats)
3 Briskets – total weight before trim 19.5 kg (44 pounds) ran out
14 racks pork ribs – 6 pieces of rib left – less than 1 rack
8 whole jerk chickens – less the a whole chicken left
12 pounds pulled pork- ran out
15 pounds pork burnt ends – ran out
9 pounds beef burnt ends – ran out
3 kg shrimp (with baby red potatoes and corn on the cob)
Bacon wrapped jalapenos (11 pounds- 20 slices per pound) Tim and I ate the last the next morning
Bacon wrapped smoked jalapeno sauasge (4 pounds bacon)

Macaroni and Cheese – 4 gallons – ran out
Smoked baked beans – 2 gallons half gallon left
