Curry Potatoes and Cashews

This is something I make that can be a side dish to go with a protein or a main course for vegetarians. It can be converted to a vegan dish by substituting the the yogurt with coconut milk. You can also substitute the cashews with

Lemon Roast Potatoes

These are a zesty flavorful way of doing potatoes. Most of the recipes for lemon roast potatoes call the Greek, but here in Nova Scotia they are mostly served as a side in Lebanese restaurants, so I generally class them in the group of Mediterranean

DUCHESSE POTATOES

These are just fancy mashed potatoes. They can be piped into shape ahead of time and finished in the oven as you are serving.

DUCHESSE POTATOES

2 1/2 lbs peeled potatoes

3 whole eggs

3 egg yolks

2 oz butter

2 oz heavy cream

1/2 tsp salt

1/2 tsp white pepper

nutmeg

Directions

  1. Boiled potatoes in lightly salted water. When cooked remove from heat and drain
  2. Pass potatoes through a ricer (mash)
  3. Stir in cream, eggs, egg yolk and spices
  4. Spoon into piping bag and form into shape ( pipe on baking sheet or directly onto serving dish)
  5. Bake at 375 degrees for 15 to 20 minutes
