This is an easy way of doing rice so you don’t have to worry about it.
2 tbsp butter
1/2 cup chopped onion
2 cup long-grain rice
1/2 cup finely diced carrot
1/4 cup finely diced celery
4 cup chicken stock
1/4 cup fresh lemon juice
1 tbsp lemon zest, grated
Directions
- In a baking dish, sauté onion in butter until soft.
- Stir in rice and cook for two minutes, stirring to coat rice with butter.
- Add chicken stock and lemon juice.
- Bring to a boil, place in the oven at 375. for 30 minutes
- Fluff up rice with a fork, turn into a heated serving bowl, and garnish with grated lemon zest.
