Beef Satay

this is one version of a satay. My marinades for this will depend on what I have on hand. Soya, Ginger based mixture work just as well. When cooking just cook though, overcooking will dry out the meat

BEEF SATAY

1 lb lean beef

1 tsp grated ginger

1 lemongrass stalk, finely chopped

3 garlic cloves, finely chopped

1 Tbsp medium curry paste

1 tsp ground cumin

1 tsp ground turmeric

4 Tbsp coconut cream

2 Tbsp fish sauce

1 tsp sugar

2- wooden satay skewers

oil for cooking

  1. Cut beef thinly into 2-inch strips. Mix together the ginger, lemongrass, garlic, medium curry paste, cumin, turmeric, coconut cream, fish sauce and sugar.
  2. Pour over the beef and set aside to marinate for about 2 hours.
  3. Thread the meat onto skewers. Brush with oil and grill over charcoal or under a preheated broiler for 3-4 minutes on each side, turning occasionally, until cooked and golden brown. Serve with the satay sauce.
