Couscous with Almonds and Pistachios

This is a flavored couscous recipe with a slight North African flavor. Simple, but tasty.

Couscous

2 1/2 cups couscous

1 tsp salt

2 tsp caster sugar

2 Tbsp sunflower oil

1/2 tsp ground cinnamon

pinch of grated nutmeg

4 Tbsp lemon juice

2 Tbsp sultanas

1/2 cup chopped blanched almonds

3 Tbsp chopped pistachio nuts

  1. Place couscous and salt in a bowl and cover with 1 1/2 cups water. Stir once and leave to stand for 5 min. Add the sugar, 1 Tbsp of the oil, cinnamon, nutmeg, lemon juice and sultanas to the couscous and mix very well.

Heat the remaining 1 Tbsp of oil in a pan and lightly fry the almonds until golden. Stir into the couscous with the pistachio nuts.
