One of our choices today is etouffee. There are similarities between etouffee, gumbo and jambalaya. It seems that etouffee is thicker, gumbo is more likely a soup, that are both usually made with a brown roux. Jambalaya is has more tomatoes with the rice cooked in. But, in many cases what you call it depends on where you are from. I have served what I thought was etouffee. During meal service I had 3 people come through, literally in one after the other. The first man looked at the line and said looks like etouffee, man number 2 said that looks like a fine gumbo, the last one through asked for some of that jambalaya. All 3 were from different states and all called it a different name. I will post the recipe soon.
