- Freeze ginger. It freezes well, when you take it out of the freezer wait 5 minutes, grate the amount you need, then put back in the freezer
- Soften beef for chinese food. Cut your beef into thin slices, place the beef in a bowl, then add 1 teaspoon of baking soda, let set for 10 or 15 minutes. Then rinse the beef. I like to rinse it 2 or 3 times, I find it has a an almost fishy smell if you don’t rinse well. This process will give you soft strips of beef for things like beef stir fry, ginger beef, beef and broccoli, etc.
- Freeze herbs. If you buy too much (there is almost always too much in a bundle for home cooking) freeze them You can just put them in a freezer bag to use next time. Or if you but herbs for a specific recipe and know exacyly how much goes into a recipe, chop them and put it in freezer trays with a small bit of water. The next time you make your recipe, You just have to pop in a cube of frozen herb.
- Label things, especially things being frozen. It help you identify what is in a frozen package. Meats that you have portioned may look similar when frozen, bags of frozen herbs all just look like green stuff. Labels will keep you from opening and refreezing things. Labels also help if you ask someone else to take something out for you. They will also let you know which to use first.
