These are just random tips. There will probably be more posts like this as thoughts wander through.

Random Tips

  1. Use a bigger pan or bowl Just because the all ingredients fit, doesn’t mean you have room to stir
  2. When making baked beans, do not add the sugar (brown sugar, molasses, honey, etc) before the beans are softened. Beans contain cellulose fibers. When boiled they soften, if sugar is added, the beans will absorb the sugar and firm up and no amount of cooking will make them soft again. Cook the beans until your desired softness, then add the sugars. This should lock the firmness in place and prevent the beans from going to mush.
  3. When cooking carrots to keep them firm add sugar. Carrots contain cellulose fibers and will absorb the sugar and will remain firm while holding for service
  4. Instant potatoes. I keep instant potatoes to use as a drying agent. I use them if my fishcakes are too wet, mashed potatoes, or places that may call for bread crumbs, but people have trouble with gluten
