CHILLED PEACH SOUP

This is another old school recipe that is almost never seen anymore. They are more common in warmer climates. Chilled soups are generally lighter in fats, and meats.

It has been warm this week and it is the season for fresh fruit. If you are having guests over and want something for a starter that does not require heat, this is for you.

CHILLED PEACH SOUP

6 Peaches

3 oranges

1 lemon

6 oz honey

4 oz white wine

4 oz yogurt

2 oz cinnamon liquor

1 tblsp sugar

Directions

  1. Remove zest, (set the zest aside) then peel and seed oranges and lemon. place in a food processor, puree quickly.
  2. Peel the peaches and add to food processor and puree
  3. Mix in honey, wine and cinnamon liquor until dissolved
  4. Stir in yogurt and chill.
  5. Place zest in a hot pan and add sugar, stir until sugar is melted. Remove from heat
  6. Remove from refrigerator and stir to mix flavors
  7. Garnish with a dollop of yogurt and the candied zest
