Mulling Spices

I am home and well rested.

The Christmas Season has started here in Sherbrooke. The annual Old Fashioned Christmas at Sherbrooke Village started last night with a visit from Santa Claus and a free concert by Dave Carrol. In honor of this I have had mulling spices simmering on the stove for the last few days.

I try to always have a variety of whole spice in my pantry, this gives me an opportunity to use some of them that may have been sitting too long

Place the spices in a small pot fill with water and turn the stove to a low heat. You only want a it to release the aroma, not cook it. If the heat is too high, you run the risk of boiling the pot dry and that is never a good thing. When you pass the stove occasionally check the water level and refill as necessary.

In my pot I used

3 cinnamon sticks

whole cloves

star anise

whole allspice

1/2 TSP nutmeg

the pot has been on the stove for 4 days and is still providing a lovely aroma.
