Cottage Cheese Ice Cream

This is something I have seen mentioned in several places. It sounded Odd, but I was intrigued. After trying it, I was very surprised. The first time, we tried it plain over strawberries. It was a hit.

500 ml Cottage Cheese

2 oz Honey

1 oz Brown Sugar

2 oz Hot water

1 tsp Vanilla

Method

Mix the hot water honey and brown sugar until honey and sugar are dissolved. Set aside.

Put the cottage cheese in a food processor. Mix until smooth and starts to whip.

Add the honey, brown sugar mixture. Mix until incorporated.

Finish with the Vanilla

Place in the freezer

Not Necessary, but helpful. When the ice cream is almost firm portion it, That way it is easier to consume. It is not churned, so ice crystals will form causing is to be very hard

Take out of the freezer a 10 or 15 minutes before eating

Options

1 cup strawberries. Cut up and mashed so juice will start to form. Mix in when.

Almost any fresh fruit will work

2 tblsp nutella, tblsp chocolate syrup. Mix until smooth. When the ice cream is almost hard fold the nutella mixture in. I prefer not to fully mix, that way I have a ripple effect.
