This recipe called for hot smoked salmon. That is not referring to the temperature of the salmon, but the way it was smoked. As part of the smoking process the salmon was cooked, it usually gives the salmon a deeper smoke flavor. Smoked Salmon Cakes

I was given this recipe by Greg Lankin many years ago. We used this as a bar snack at Pipers Pub in Antigonish when I worked there. The filling can be made ahead and cooled. It is much easier to spoon on to your dough

STUFFED MUSHROOM CAPS

This is something I found in my files. They are good for a warm appetizer or a side for a steak

STUFFED MUSHROOM CAPS

16 oz Large mushrooms

1/2 cup diced bacon

2 cloves garlic

1/2 cup grated swiss cheese

2 oz butter

1 cup bread crumbs

  1. Clean mushrooms and remove stems. Dice stems and set aside
  2. Saute caps lightly in olive oil. Set aside
  3. Saute bacon until starting to brown. Add diced stems and simmer for 2 minutes.
  4. Remove from pan and drain
  5. Melt butter and add crushed garlic return bacon and mushroom to the pan, then stir in the bread crumb
  6. Remove from heat and stir in the cheese
  7. Stuff filling into the mushroom caps. Bake 350 10 minutes
