I have not been doing much cooking lately. I had to leave work early because of a death in the family, then we had the visit from hurricane Fiona. But, now I am getting ready to do a wedding meal for 120 people. I ordered

I was asked to do a menu for my niece’s wedding. It is not until next year, but she believes in planning and being organized. We agreed on BBQ as a theme, as the wedding will be held outside as much as possible. Being me, I put together a small simple menu. To be honest, I sometimes get carried away.

BBQ Sauce

BBQ Sauce

This recipe is my base BBQ sauce. This one is can be shaped to taste. A little sweeter, more vinegar, you want a bit more heat add tablespoon of cayenne. If I am doing this for ribs or pulled pork, I will add the pan

This is more method than recipe. I will rub my ribs then smoke them before chilling if I have access to a smoker. When roasting the ribs it is important to keep them sealed, this lets the steam in the pan do it’s work. I
