Spider Cookies

Macaroon cookies, no-bake chocolate cookies, haystack cookies, chocolate drop cookies, mud pie cookies and a few more. This recipe has more names than any recipe that I know. It was a recipe that everybody’s mother made and everybody’s mother called it something else. Most of the recipes are the same except some use butter. I prefer the shortening. The cookies are shinier and look better longer, the butter may burn easier. This is my mother’s recipe, so I am biased.

MACAROON COOKIES

2 cups granulated sugar

1/2 cup shortening

1/2 cup milk

1/2 cup cocoa

1 tsp salt

vanilla

1 cup fine shredded coconut

2 cups oatmeal

1-2 cookie sheets with greased parchment or waxed paper

1. Combine the first four ingredients together in a large pot and bring to a boil for about 4-6 minutes, stirring constantly. Start your timer when the mixture starts to boil not before. I usually go with at least 5 minutes just to make sure they harden.

2. Take pot off of stove and add the coconut and oatmeal. Mix until everything is coated.

Scoop out on the parchment will still warm. It should give you between 2 and 3 dozen

This is a soft chewy truffle common in Brazil. Legend has it, that it got it’s name in the 40’s or 50’s when a brigadier general was running for president of Brazil. As a fund raiser the ladies would make and sell these candies to
