Deadly Chocolate Cheesecake Truffle

I am not exactly sure what this is. I serve this an an individual dessert. It is a cross between a cheesecake, a ganache, and a chocolate pate. I had too much time and chocolate on my hands when I started making this.

Deadly Chocolate

8 oz cream cheese

3 oz sugar

7 oz chocolate

6 oz cream

3 egg yolks

  1. Melt chocolate and cream together. Let cool
  2. Whip cream cheese and sugar until smooth
  3. Add egg yolks to chocolate
  4. Fold cream cheese into chocolate
  5. Line a 6 oz ramekin with parchment paper and fill 3/4 full
  6. Bake in a bain marie until set at 275 for 20 minutes
  7. Let cool. Remove from ramekin, take off parchment and serve with crème Chantilly or crème frais
