This is a non-traditional version of potato leek soup. The smoked salmon can be either hot smoked or traditional cold smoked.
Potato and Leek Soup with Smoked Salmon
2 oz butter
2 cups sliced leek
1 clove garlic
4 cups diced potatoes
smoked salmon
5 cups chicken or vegetable stock
½ cup 35% cream
sour cream
½ cup white wine
½ tsp nutmeg
salt to taste
Directions
- Saute 1 oz butter , 1 cup of leeks and garlic until the leeks are soft.
- Add stock and potatoes. Cook until potatoes are soft, then remove from heat.
- Puree the potatoes, leek and stock in a food processor or blender.
- Saute remaining butter and leeks. Add white wine. Combine with puree. Heat gently and stir in 35% cream and nutmeg.
- In a serving bowl, break up 2 oz hot smoked salmon or a slice of julienned cold smoked salmon and cover with soup.
- Garnish with a tbsp of sour cream in the center and fresh black pepper.
