This recipe called for hot smoked salmon. That is not referring to the temperature of the salmon, but the way it was smoked. As part of the smoking process the salmon was cooked, it usually gives the salmon a deeper smoke flavor. Smoked Salmon Cakes

This came from a time when I was playing with a lot of smoked salmon. There was a Salmon smokehouse close to where I live, and I started thinking (obsessing) on how to use smoked salmon, both, hot and cold smoked. I came up with 

Potato Leek Soup with Smoked Salmon

Potato Leek Soup with Smoked Salmon

This is a non-traditional version of potato leek soup. The smoked salmon can be either hot smoked or traditional cold smoked.

Potato and Leek Soup with Smoked Salmon

2 oz butter

2 cups sliced leek

1 clove garlic

4 cups diced potatoes

smoked salmon

5 cups chicken or vegetable stock

½ cup 35% cream

sour cream

½ cup white wine

½ tsp nutmeg

salt to taste

Directions

  1. Saute 1 oz butter , 1 cup of leeks and garlic until the leeks are soft.
  • Add stock and potatoes.  Cook until potatoes are soft, then remove from heat.
  • Puree the potatoes, leek and stock in a food processor or blender.
  • Saute remaining butter and leeks.  Add white wine.  Combine with puree.  Heat gently and stir in 35% cream and nutmeg.
  • In a serving bowl, break up 2 oz hot smoked salmon or a slice of julienned cold smoked salmon and cover with soup.
  • Garnish with a tbsp of sour cream in the center and fresh black pepper.
