RASPBERRY VINEGAR POACHED PEARS
RASPBERRY VINEGAR POACHED PEARS
4 pears
2 oz butter
6 oz brown sugar
6 oz red wine
4 oz raspberry vinegar
4oz water
1 tsp corn starch
Directions
- Peel the pears and with a melon baller remove the core. Cut in half
- Melt 1 oz butter in a frying pan. Place pears in the pan , heat until starting to brown
- Add red wine, sugar and water, simmer until pears are soft. Continue simmering until liquid is reduced by half.
- Stir in raspberry vinegar,return to simmer. Remove pears from liquid
- Make a slurry with the corn starch and add to the to the liquid.
- Add the remaining butter and return pears to pan
Serve with white chocolate mousse, or creme chantilly
