It was a beautiful day. I had my porthole open all day. Sailboats were out in the basin, and I saw a couple kayaks going by.

On today’s menu we have breaded pork steak, which is the same as country fried pork steak, or pork schnitzel, Hunters chicken (cacciatore), tortierre, and Szechuan Shrimp. It looks like I am all over the map on this one.

We will be back to feeding our friends on the Earl Grey today.

It is another day of just being tied up. We should be ready to go by the end of the hitch. Work seems to be proceeding close to on schedule.

I am firing up the smoker to do a couple pork shoulders. They will become pulled pork for dinner. The roast striploin went in the oven at 5 pm, November 3rd. It will come out at 11 am, November 4th. That is 18 hours in the oven. The temperature is set at 132F. About 10 am I will have to check the temperature and put part of it in at a high temp, for the people who like it a bit more well done.

Our friends on the Earl Grey are having Char Siu Pork, it should be even better than today because of the extra day marinating. They are also having sausage and sauerkraut. While the sausage are nothing to write home about the sauerkraut is. It is old school food. Done the traditional way, it is the way food should taste.

It is the first day of November. The weather was windy and wet today, but it was still mild enough that there was a sailboat on the water today.

On today’s menu our soup is Tom Kha. It is a Thai shrimp soup. Tom kha is similar to Tom Yum, the difference is the addition of coconut milk and a bit of chili.

This an edit to to the post. We have a Thai cadet on the ship this hitch. Apparently, what I made is called creamy Tom Yum, not tom kha. Tom kha is a creamy white made with evaporated milk. My soup was made with coconut milk.

I have a few different dietary needs to take into consideration. Among the things to consider are lactose intolerance, celiac disease, a vegan, a person that does not eat red meat, and allergies to shellfish and pineapple. Overall that is not bad, I have had to deal with worse.

The start of another week. Congratulations to those that do not have to go to work today. We have been celebrating Queen Victoria’s birthday since 1845. That’s a pretty good run for a birthday party.

Today we are having pan fried haddock, and perogies for lunch. I don’t mess with pan fried fish. I beat an egg, throw it in with my fish. Dredge the fish in seasoned flour. Fry it in a bit of oil until it turns brown, flip it and fry the other side until brown. Take it out and eat. Don’t overcook it, if it is brown it is done. Don’t do it to far ahead of time or it will get soft (because you cooked it properly and it still has moisture in it). The perogies have a bunch of fixings with them to make a fairly bland item more exciting. For dinner, I am back on the grill with the pork chops. I really like having the BBQ so close.

On today’s menu we have a Lancastershire Hot Pot. It is a baked stew,(casserole ), with meat, gravy and sliced potatoes. This was traditionally made with lamb, well, really mutton. I have substituted beef as it is generally more accepted that lamb or mutton.

One of our choices today is etouffee. There are similarities between etouffee, gumbo and jambalaya. It seems that etouffee is thicker, gumbo is more likely a soup, that are both usually made with a brown roux. Jambalaya is has more tomatoes with the rice cooked in. But, in many cases what you call it depends on where you are from. I have served what I thought was etouffee. During meal service I had 3 people come through, literally in one after the other. The first man looked at the line and said looks like etouffee, man number 2 said that looks like a fine gumbo, the last one through asked for some of that jambalaya. All 3 were from different states and all called it a different name. I will post the recipe soon.

Today is Chinese for lunch, I do restaurant Chinese food. I am not familiar enough to do a proper Chinese meal. But, my stuff is better than most restaurants, (even if that is just my opinion). Vegetables should be crisp and bright. If meat is coated it should be crisp, but not not heavy. If not coated the meat should be tender and flavorful.

Dinner is burgers (I will put the burger in the smoker for a short time then finish the on the BBQ) and potato skins, or a lemon marinated chicken with couscous and Moroccan vegetables.
